    * 125g butter
    * 1 tsp vanilla essence
    * 3/4 cup caster sugar
    * 2 eggs
    * 1 &1/2 cups sifted self raising flour
    * 1/2 cup milk
#   Line a 12 muffin tin with large cupcake liners (patty cake liners).
#   Cream the butter, essence and sugar in a bowl with a hand mixer until light and fluffy (I have also used a blender and it had the same result).
#   Add eggs one at a time and beat until combined (I have also just added one egg at a time in the blender and it had the same result). Then stir in hald the sifted flour and half the milk. Then stir in the remaining flour and milk.
#   Fill the cupcake liners.
#   Bake for 17 minutes in a fan forced oven at 180 degrees (Moderate oven). Poke one cupcake with a scewer to ensure they are cooked through. If mixture sticks to the scewer continue to bake for another few minutes and retest. You don't want the cupcakes to peak as then you will have to cut the top off to make them even.
#   Remove muffin tin from oven. Let rest for 5 minutes. Place on wire rack to cool
